Greek Salad
Cucumber and tomatoes are cut into chunks and tossed with thinly sliced red onion, kalamata olives, and an oregano vinaigrette. This salad has no lettuce and needs no cooking. The feta is crumbled over the top at the very end so it stays in pieces. It goes well with anything from the grill and with the gyros.

Steps
- Cut the cucumber and the Roma tomatoes into chunks, not slices, and put them in a large bowl. Chunks are easier to pick up with a fork.
- Slice the red onion as thinly as you can. Pit the kalamata olives if they have pits, and cut them in half. Add the onion and the olives to the bowl.
- In a small bowl, whisk the olive oil, the red wine vinegar, and the oregano together. Pour the dressing over the salad and toss.
- Crumble the feta cheese over the top at the end, so it stays in pieces and does not disappear into the dressing. Serve the salad cold.
