Caesar Salad

Crisp romaine is tossed with Caesar dressing, parmesan, croutons, a squeeze of lemon, and plenty of black pepper. There is no cooking, and it goes with almost any Italian main dish. The step that matters most is drying the leaves well. Caesar dressing usually contains anchovy, so check the label if anyone at the table doesn’t eat fish.

Steps

  1. Wash the romaine lettuce and dry it thoroughly with a towel or a salad spinner. This step matters most, because dressing slides off wet leaves and pools at the bottom of the bowl.
  2. Chop the leaves into bite-size pieces and keep them in the refrigerator until you are ready to serve. Cold, crisp leaves keep the salad from going limp.
  3. Toss the leaves with about two-thirds of the Caesar dressing, and add more only if the salad needs it. A Caesar salad with too much dressing goes soggy within minutes.
  4. Add the parmesan cheese, the croutons, a squeeze of lemon, and plenty of black pepper. Toss once more, and serve right away.
